For trail riding in the UK, it's about keeping the damp out - it doesn't get as cold over here. Army surplus is a good budget option. Army goretex over socks <?10 (like sealskins, but fraction of the price) Army goretex overtrousers that go over boots and have braces to stop them falling down when riding <?30. Helly Hansen wicking under layers are good, but it rarely gets cold enough to need them. I wear a helly hansen fleece jacket if it's really cold and / or one of those cheap alpinestars waterproof tops if rains a lot (bit sweaty). Carry spare pairs of gloves in case they get soaked. Can you still get those lined scott gloves ? - they're excellent. It's good to carry a warm woollen hat to keep body heat from escaping if you have to stop to repair a bike. Don't dress too warm - I've seen people wearing very heavy winter road bike clothing overheat with the exertion of riding on the trails.
