If cooling is an issue, would an uprated water pump not be a better option to shift the coolant faster round the radiators? Or a radiator fan to improve cooling airflow rates in slow riding? Probably would ditch the thermostat as it must restrict water flow even when fully open.

I tend to agree.
With regards to replacing the thermostat with one of these I have always worried that you have a hard edgy metal piece right next to your radiators, the chance of it rubbing a hole in the rad must be quite high and definitly outweighs any heat transfer benefits.
with regards to heat transfer you will be better off fitting a fan kit from the GG trials bikes and a manual switch to turn it on and off as you want
