Your jetting seems quite lean to me, especially for cold weather.
If I may ask...
What slide is in the carb, and what needle and clip groove are you using?

With a #7 slide, I normally run a 42 pilot with a 178 main in cool weather, and may drop to a 175 when it's really hot. (I am running a N1EG needle with the clip in the 2nd groove from the top.) The bike spooges just a bit, but not badly, and the bike runs really well (very smoothly). When I run the 175, the bike doesn't run out on top nearly as strong. I run good grade oil pre-mixed at 40/1 with 92 octane gas.
