And I'm a somewhat spritely 28 year old who has owned a 2010 EC300 Race for just over 12 months (130hrs) am also considering 'adding' a 2012 EC200 to the stable.

I had been considering selling the 300 for a 250, but am also considering a 200 due to $ and c. The 300 has more power than any human can put to the ground between the trees and limits how often you get to really turn the throttle. Like John I find the fun is in the twisting, feeling the bike pull and hearing it sing, and doing this all day on a 300 is hard work.

It really depends on your style and terrain. As stated the same frames, the same weight. My 300 will roll off idle without hesitation in 3rd gear from a stand still with only a little clutch. Its forgiving in that sense. It'll also break loose in top gear if you open it up on a firetrail.
