Default 2005 frames vs pre 2005 frames

Thinking of adding a 300 next to my 2003 200. I worry that if I buy a 2005 framed bike I will not get the low seat height and super stable handling (ie slow steering to me at least) that has allowed me to ride faster than I would on another bike.

All reports say the 2005 bike handles better but I am not really getting detailed reasons for this. If it steers quicker I might not think that is an improvment.

So how does this bike differ compared to the pre-2005 framed bikes?

As far as I have been told and know only slight changes on steering head angle change. I have bought a 05 frame with a title to swop with my 03 MC 250 haven't done it yet but the only difference I can tell is it has no tab for my rear master cylinder

I assume the angle is in the direction of making it steer quicker? It only requires a slight change to make it feel like a horrible ktm. This is my worry.....

I have an 06. It's sprung for my weight and is stable, nothing like that strange feeling you get from sharp steering ktms. Heightwise, I'm 5'9" and wouldn't want it to be any taller. That EC300 pictured looks tidy, I reckon the 04 to 06 ECs are still a good buy if they are in clean condition.
