Wiring a '13 XC250r

I find it curious that with GasGas there can be so many different variations of this theme, even between the same line. There is a sweet '13 XC250 (non-e) I am seriously considering, however, the idea of re-wiring a bike scares the shit out of me, as I have NO electrical expertise. My only "requirement" for the bike is the ability to legally plate the thing for NY use, even though I don't plan on doing any real road work.

Based on what I'm reading, is the EC line with e-start is the bike I should be focusing on?

Does anyone know what year model bikes would XC stripped down harness fit.
or which one would be plug and play for a 05 EC if you wanted to ditch the lights. Doing a resto on a 05ec and want to shed baggage, thanks.
