Question How much fluid and pressure and sag?

Changing out the fluid in my rear shock-
I have done forks but never a shock- any suggestions and help will be appreciated. I have Amsoil light and medium weight fluids - I am a class C rider (240lbs) and ride mostly single track and some moderately rocky trails - I will get a local shop to repressurize the shock but I want to change the fluid. The bike is an 07ec300 with sachs shock.
