I used ccm wheels and had to get a spacers made up, I used a ccm caliper and bracket, I want to get a bracket for the nissin caliper at some point. check out ebay for wheels or for all nice new gear there are these guys

i want to put the 40 tooth sprocket that i got with my bike on it .

i don't want to take links of my chain incase i want to put the big sprocket back on so i'll buy another smaller chain .

what i'm not sure of is what chain to buy for the 40T sprocket , will a DID 520 x ring chain do ?

Yes, a 520 X ring chain will do nicely. At least it does so on my EC200 with enduro wheels.
