I'd love to try an '07 if it turns better than mine. I've never ridden a bike that had a more perfect balance than my '01 EC 300. It has the LTR 124mm pull rods, and Ohlins front and rear. My 250 prior to this was also amazing in the turns, and straights. The 200 I had before that had the old Marzocci Magnum 45s, and it was also amazing, though not as predictable in the high speed, or the straights.
I would buy an '07 though, on looks alone. Man, what a sweet looking bike. I think the fender/sideplate combo does a lot for the way the bike looks. Just my opinion.

The '00 and '01 turn very good. My '03 did not turn as well as my '00. The '07 is another level. Try experimenting with the stock pull rods if you want to quicken the steering more for the tight stuff, its easy.
